Holiday Garlic & Rosemary Roasted Baron of Beef

Serves: up to 15 people
Ingredients
2 tbsp
olive oil
2 tsp
salt
2 tsp
ground black pepper
Step by Step Instructions
- Place the roast in a roasting pan fat-side up. Mix garlic, oil and seasonings together. Spread over roast and let sit at room temp. for no more than 1 hour.
- Preheat oven to 500F. Roast for 30 min. then reduce to 325F and continue to roast for another 1-1/2 hr or until internal temperature reads 150F (medium rare – my preferred method for this cut).
- Allow to rest for 10-15 min. (covered with foil), before carving. Strain any pan juices and serve along side.
